and small cafe.

So it is with heavy hearts we announce the cafe and bakery
located at Chestnut Pines will not be returning.

As Chestnut Pines is a 120 year old historic home we are able to best provide comfort for individuals & parties of 2-6

COFFEE
Hand brewed medium roast: $3.00
Hot vanilla, chai, mocha latte: $5.75

 

Kombucha: We offer Redmond Heritage Farm Stores organic, locally made kombucha. Which is a fermented ancient food that is carbonated and full of live micro-organisms, it has been used in the past to boost gut health acting as a probiotic.
Our current flavors rotate seasonally between Original, Spiced Cider, Lavender Hibiscuses and Blueberry.

Drink Fridge: We carry a variety of choices between orange juice, olipops, sparking water, ginger beer,

We only use natural sweetners in our products such as raw local honey, coconut sugar, raw demerara sugar, pure maple syrup & black strap molasses


BAKERY

SOURDOUGH

Our sourdough products are made and naturally fermented with our wild yeast start, named Mr. Bubbles. which is a natural accumulation of whole wheat, filtered water and healthy strains of yeast and bacteria from our local environment.

We use the fermenting process of sourdough because it decreases all the bad stuff like gluten and changes it into a a digestible form which is easy for the gut to absorb, while at the same time increasing the crucial vitamins and minerals found in wheat such as Vitamins B, zinc and iron.

We currently carry 3 types of sourdough bread:
Spelt Loaf, Spelt is an ancient wheat that was commonly used during the bronze age, it naturally contains a more digestible form of gluten and a greater amount of nutrition than whole wheat does. This loaf is delicious as it ishardy and very filling.
Farmhouse Loaf, Made from an organic whole hard white wheat (not processed white flour) This loaf is tasteful as it is light and fluffy.
Cinnamon loaf, Made from an organic wheat that is not bleached, fortified or chemically altered it simply has a small portion of the bran removed while leaving most of the nutrition in the wheat, this creates a wholesome pastry flour which creates our mouth water hand rolled cinnamon bread.

SPROUTING

Sprouting is a process which accomplishes the same benefits that sourdough does using a different method. Sprouting consists of soaking wheat berries in water for long periods of time until the seed is brought to life showing a visible sprout, the berry is then ground down into whole wheat flour.

This ancient technique decreases all the bad stuff like gluten and changes it into a a digestible form which is easy for the gut to absorb, while at the same time increasing the crucial vitamins and minerals found in wheat such as Vitamins B, zinc and iron.

Sprouting, unlike sourdough does not contain a naturally occurring wild yeast which acts as a rising agent when making bread. Due to it’s lack of yeast, baked goods that do not require yeast are made with it.

We currently carry a variety of sprouted products:
Cacao Cookie, Made from ancient sprouted khorasan wheat and cacao chips this is a delicious treat or a satisfying energy bar as the khorasan provides filling protein to the body and the fat content creates large amounts of energy.
Sweet bread, We offer a variety of sweet breads made from our sprouted grains such as pumpkin bread, banana bread and apple crips bread depending on the season we are currently in.
